HOW TO LIVE THROUGH A REMODELLING?

After fact sheet no.4 presented in our last issue, let us continue our journey in the remodelling project of the Coccinelle Supermarché of Saint-Léger-du-Bourg-Denis. This phase takes us from the beginning of the renovation works to the installation of the store’s sign, namely two months of the life of our outlet between last January and March. To better understand this phase, you should get our last issue of CocciPratic containing the plan as well as the retro-planning of the building works and various arrangements. The last part of this journey in our next issue with the opening and the inauguration.

CLOSING OR NOT?

  • Without closing: A remodelling per zone of open store is possible, but must be meticulously planned to avoid a disaster: work site meeting in advance, perfect framing of schedules (suppliers, deliveries, craftsmen, …) safety and security of the building works, workforce, information on the inconvenience caused (customers, teams, environment).
  • Closing: the remodelling takes place in good working conditions. Other advantages, closing allows you to make news for the re-opening. Therefore, customers should be informed beforehand so that they plan ahead and can stock up on groceries. Many positive factors that contribute to generating more turnover than leaving the store open.

Before remodelling, make sure to clear everything…

  • Inform the neighbourhood (residents, co-owners…) and customers by displays a poster
  • Think of hiring one or several skips
  • Do not forget to evacuate old equipment. See if it possible to resell the furniture
  • Hire sufficient workforce and arrange for tools to dismantle quickly and in good conditions.
  • Check your appointments on the D-Day with the refrigeration mechanic, the electrician and the IT supplier (cash register) … and stock up on goods.
  • Sort them properly by family groups and place them on __. Classify them by the order that you took them out before putting them in the store room (the first one packed will be last one out)
  • Do not forget pallets, plastic wrap…
  • Remember to rent a refrigerated truck for lack of a cold room (ask the town hall for an authorization for outdoor storage)

TILING

It is between 15 and 20 m2 per day and per tiler. About the drying, it will take a day to the maximum. The tiling reference is the medium grey Grès Céram. It offers the best aesthetic/solidity ration. Note that a wood flooring can be laid in the cellar area provided that the space is significant.

Lighting must be carefully thought out, sales depend on it. The location, the height, the colour, the intensity, the highlighting of the strong points, the guidance of the flow direction… all criteria that create ambiance, add value to the offer and hence, vamps up the turnover.

  • MRecommended equipment: T5 with reflector. In terms of accent lighting (entrance areas, fruits and vegetables, back of the store, neutral zones, check out area): LED ramps
  • In case of remodelling, it is essential to fit the lighting only once the plan has been drawn up and the furniture chosen.

THE PAINTING

Painting provides warmth, avoid too clinical store look, highlight the universes right from the entrance.

  • Red (RAL 3020) for the Coccinelles or orange (RAL 2003) for the CocciMarkets are highly recommended for the walls of the fresh produce/fruit and vegetable sections.
  • Grey (RAL 7016) for the dry zones.
  • A two-tone paint job on the posts to create a discontinuity.
  • Caution, for the ceiling of the stores, it is better to choose white to not give the impression of a low ceiling.

NEW FURNITURE

The respect of delivery deadlines is very important, it is necessary to lock down the arrival times and provide access and ensure the installation takes place easily.

  • The installation should be done by professionals (custom-made assembly with compliance of safety standards). In the event of an accident, your liability will not be incurred. Moreover, professional fitters have all the tools and spare parts.
  • Coordination with the refrigerator mechanic.
  • Coordination with the electrician for the cash registers and the IT supplier.

MERCHANDISING

A merchandising rule that is valid for all aisles.

  • Isolate two products of each reference and store them in the storeroom while waiting for to be shelved again.
  • From the plans and new framework, determine the new references to be ordered. For information, the new layout of Coccinelle Supermarché of Saint-Léger has allowed for 2000 new references (in addition to the existing 4000).
  • Arranging the shelves and transferring the two products (frame building) by always marking via the price labels under the product placed on the left, so as to know where to start the facing when the frame is finished. Checking on the stock journal to fill possible spaces and order missing products before the definite filling.

Last phase before re-opening.

  • Provide the necessary equipment for the fitters, especially by ensuring safety during the fitting of the outdoor sign (recent ladder, tractor with working platform).
  • Bring the simulation to avoid inversions, because each element of the concept has a deliberate defined place.

Do not forget to order bags, shopping trolleys, poster material, labels for fruits and vegetables, traditional butchery, product presentation kits, etc.
